The need is forcing Russians to actively look for options to save on everything. Everyone is looking for their own way to spend less money. Often all this leads to the choice of only the cheapest food. What threatens such an anti-crisis menu?

Victoria Pavlova

As Novye Izvestiya recently found out, official inflation and rising food prices have nothing in common. And in 2022, you should not expect a return to the previous price tags. In Russia, the index of survival is already the worst in Europe: the minimum set of products in our country costs 45.6% of the minimum wage. While the normal figure for European countries is at the level of 16%, and in the UK it is 6.6%. This situation forces people to save on food - everything else has already been saved. Search queries in Google confirm this: people are trying to save money not on clothes, household appliances, but on food.

Cheap but not angry

In European countries, a varied and healthy diet is the norm, while in Russia it is increasingly becoming an inaccessible exotic. Novye Izvestia calculated what foods can provide you with the cheapest calories, compiled an anti-crisis menu, and, together with experts, figured out what to expect as a result of such nutrition.

The classic average nutrition model from nutritionists looks like this: 400 kcal should be breakfast, and lunch and dinner should be 600 kcal each. For breakfast, 117 grams of oatmeal on the water for 5.5 rubles are suitable. You can’t stretch further on cereals alone, says Yulia Panova, a dietitian at the Clinic of the Institute of Nutrition of the Russian Academy of Medical Sciences.

- If you eat only cereals - it's still malnutrition, you need to add legumes.

The disadvantages of eating only cereals are explained by the biochemist and nutritionist Yekaterina Biryukova:

- Cereals can give us a lot of energy in the form of carbohydrates and protein, which is the main building material for the body. But fats will not be enough, in the future, various disorders of the hormonal system, disorders of the reproductive system, deficiency of vitamins D, A, E, K, which means a deterioration in the functioning of the immune system, osteoporosis, bleeding, visual impairment, a decrease in antioxidant protection and the development of cardiovascular disease. vascular diseases (especially with an excess of carbohydrates). Without fat, a balanced diet will not be healthy either.

Tatyana Fedchenko, coordinator of the fitness diagnostics direction of the fitness club network, also reminds that excessive passion for cereals can bring a lot of trouble:

- Grains are rich in fiber, zinc, folic acid and iron. However, cereals should not be carried away. Their excessive consumption leads to diarrhea, anemia, malfunction of the cardiovascular system and kidneys. It is important to remember: the medicine from the poison differs in dosage.

So for lunch - 87 grams of rice for 7.6 rubles, 75 grams of peas for 5.6 rubles and 38 grams of white bread for 2.3 rubles. The whole dinner came out at 15.5 rubles. For dinner, rice can be replaced with pasta, peas with beans, and white bread with black bread. It will turn out 16.1 rubles. In total, the minimum possible diet of an average person, consisting of the cheapest cereals and flour products with a small addition of legumes, will cost 37.1 rubles. You still have to look for products at such prices, but in theory you can survive. So beloved by millions, instant noodles in bags are also not far behind - they take 28th place in our ranking of the most affordable products. It seems that now we know how the famous low prices in the State Duma canteen are calculated.

But experts note that such nutrition is very far from a healthy diet and can cause serious health complications. Yulia Panova warns that such a diet cannot be healthy:

- If we talk only about cereals and instant noodles, it is impossible to make a healthy diet out of them, because there will be a lack of both proteins and full-fledged carbohydrates, it will be the simplest food, there will be a shortage of the most necessary substances and a person will feel bad. It is impossible to make a sensible, full-fledged diet from these cheap products.

Nutritionist Ksenia Pustovaya categorically opposes both such a diet and cheap processed foods:

- Eating only carbohydrates for a long time is fraught for the body. The daily diet should be proteins, fats and carbohydrates 1:1:4, respectively. It is not worth excluding pasta, bread, etc. from the diet in general. Preferably made with whole wheat flour. Ideal - homemade bread and pastries. And instant noodles, like puree, soups - related to fast food. AND except for vermicelli, which swells on the eyes, bags contain spices, including flavor enhancers (sodium glutamate E261 leads to thinning of the retina and loss of vision, enhances oxidative processes, damages brain cells, contributes to obesity and recurrence of chronic gastrointestinal diseases), preservatives (sodium benzoate E211 - color enhancer, inhibits the action of yeasts and molds. The relationship has been proven: with malignant neoplasms, Parkinson's disease, cirrhosis of the liver and a number of neurodegenerative diseases). These food additives adversely affect the digestive organs, leading to disorders and gastritis. Instant noodles does not contain any benefit, so the body seems to be saturated, but not for long

Tatyana Fedchenko describes the consequences of the abuse of white bread and instant noodles no less colorfully:

- The main disadvantage of these products is that they are made from refined flour. It does not contain nutrients and is poorly excreted from the body. Because of this, a lot of mucus is formed in the intestines, which stimulates the reproduction of pathogenic microorganisms.

Maybe then switch to cereals with legumes? Everyone knows that oatmeal, millet and barley porridge are healthy. At the same time and cheap. I salted one porridge, sweetened the other - that's the variety. But Yulia Panova notes that this is only part of a truly balanced diet:

- If we make up a diet of not very expensive products, but at the same time healthy, then we need to add chicken (which is cheaper compared to beef) to the diet with cereals and legumes, choose cheap vegetables from the category of cabbage, carrots, onions, garlic, and some cheap apples. From this it is already possible to make some more or less acceptable diet.

Ksenia Pustovaya points out that in order to maintain health, it is necessary to strictly observe the norms of nutrients and adhere to the nutrition schedule:

- Diet - at least 4-5 times a day. Three full meals - breakfast, lunch and dinner and two snacks (lunch and afternoon tea). It is advisable to eat breakfast within the first hour after getting up, and the last meal 3 hours before bedtime. Portions should be small - 250-300 gr. Such a volume will not stretch the stomach and will be absorbed faster.

Force yourself to eat black caviar

Such a phrase from an old Soviet propaganda poster can characterize the approach to healthy eating. Only with current prices, vegetables and fruits are already becoming like black caviar.

You can’t do without vegetables and fruits, Yekaterina Biryukova is sure:

- Food groups such as cereals, dairy products, meat and poultry, oils and nuts, vegetables, herbs and fruits should be present every day. You can eat up to 3-4 fruits per day.

Elementary cucumbers, tomatoes, cabbage, the usual pears and oranges fell into the category of foods with the most expensive calories: you can’t get enough of them. But for 2 small oranges weighing 100 grams and 1 pear weighing 120 grams, you will have to pay at least 46 rubles - more than our entire “anti-crisis menu”. 200 grams of chicken legs, 100 grams of cucumbers and 100 grams of tomatoes will give at least another 70 rubles to the daily diet. The most basic healthy food is several times more expensive than the economical option. But it’s not always possible to find the cheapest products, some products can be spoiled, you want variety, treat yourself to sausage, you want something delicious for tea ... All this increases costs at times.

Yulia Panova admits that people living below the poverty line have no chance for a healthy and nutritious diet:

- If we focus on the cost of living, then it is hardly possible to eat anything with this money.

And 17.6 million people officially live below that very poverty line in Russia. In reality, more. Only a change in the method of calculation with a refusal to be tied to the subsistence minimum made it possible to reduce the number of poor Russians by 2.8 million people. But the authorities are not very worried about this, because you can live on 37 rubles a day. Most likely, not for long and unhappily, but these are already details.
